In business for ten years, Liberty is an established Vietnamese
restaurant and well worth a visit. The décor is a mix of western
and oriental styles: modern funiture in harmony with traditional
interiors. with its two floors, Liberty can serve about 100
diners. At ground level, the bar, decorated with twinkling lights,
takes centre stage. Try their "Welcome to Liberty" cocktail, made
with orange juice, wine and sugar. If you prefer a more authentic
Vietnamese atmosphere and more intimacy, take a seat upstairs,
where you can enjoy traditional music performances as you dine.
Liberty's menu features Vietnamese royal and popular local dishes.
However, their specialty is fresh seafood dishes, such as elephant
fish, prawns, shrimps, oysters and cuttle fish, which are either
steamed with soya sauce, deep-fried, braised or grilled. Try the
"sunshine" cuttle fish (VND 65,000), Liberty's signature dish,
which features fresh cuttle fish dried in the sun, marinated with
salt, chillies, or hot black sauce and grilled on charcoal
stoves. A soup dish cooked with pork and chicken and Kim Cham
flower, (grown in Vietnam's soujtern provinces), served with rice,
offers a nore unusual taste (VND 35,000 a bowl for two). Rounding
off the meal, try some of the desserts, such as sweet almond bean
curd, served cold (VND 25,000). Friendly and attentive staff, plus
delicious fare right in the heart of the city. Liberty is a top
